How do I destroy fighters in a capital ship?

When it comes to capital ships there is no fighter in the galaxy that can harm you BUT they can be very annoying to swat with your PPCs. The trick is to make slow gentle manoeuvres; the longer the enemy fighter must travel on a specific course the more bolts are likely to hit their targets.
