What are wingmen?

Wingmen are simply fighter ships that you own, which have been given the additional setting of "Wingman." They can be given orders separately from all other ships. They don't behave differently, but the ability of the player to issue specific orders only to wingmen, and to use shortcuts for the most common orders, makes those ships a lot more versatile.
